Mushrooms:
The most commonly consumed mushroom in the world is Agaricus bisporus or the white button mushroom. Only about 45% of mushrooms produced are consumed in the fresh form. The rest of the 55% is processed with 5% in the dehydrated form and 50% in the canned mushrooms form.

Baby Corn:
Baby Corn is a relatively a new vegetable. Tender and sweet baby corns are often used in Chinese dishes and salads. Seeds are sown in spring and are cultivated like regular sweet corns. Most baby corn commercially available in the U.S. is grown and processed in Asia, particularly in Thailand.

Bamboo shoots:
Bamboo shoots are young, new canes that are harvested for food before they are two weeks old or one-foot tall. They are used frequently in Asian cuisine. Commercially canned bamboo shoots are common, but fresh, locally grown bamboo has far better flavor and texture.

Tea
is the second most consumed beverage behind water. There must be something special about this brewed beverage.Tea is basically the dried and processed leaves of only one species of plant called camellia sinensis.Some teas are flavored with oils or scented with flower petals during the processing stage. Some teas are blends of the various types of tea.

The three main categories of tea are black, green, and oolong. Green teas, Black teas and Oolong teas come from the same tea plant species,the difference being the processing of Black tea undergo several hours of oxidation during preparation (accelerated by heat and humidity) Oolong tea is partially fermented and green tea is steamed to stop oxidation.

Black tea is allowed to oxidise during manufacture but there are considerable variations in method. This gives them immense variety of character. We specialise in tea made by the orthodox method and all are the best quality large leaf grades.Black teas are the most consumed of the four types of teas. They are the highest in caffeine, but still have antioxidant properties, just not quite as much as others.
Green Tea
Green Tea has very low levels of caffeine (8.4 mg per cup compared with 25-110 mg per cup for black teas and 60-120 mg for coffee). Green teas are fresher in taste and should be drunk not too strong and without milk.Green teas, like white teas, are closer to tasting like fresh leaves,grass than the black or oolong.They have higher antioxidant properties.

Oolong Tea

Oolong Tea meaning black dragon, are semi-fermented.They are very light and delicate. Oolongs are picked when the leaves are not too young and are processed immediately after plucking. They are always whole leaf teas, never broken by rolling. Oolong teas are the most difficult of the four types of teas to process. The best way to describe oolong tea is that they are somewhere in between green and black tea. This is because they are only partially oxidized during the processing.
